Cold fruit soup
When in Hungary, do not miss GYÜMÖLCSLEVES (gyümölcs=fruit, leves=soup). It’s served chilled as a starter but if you wish you can have it as a dessert.
GYÜMÖLCSLEVES i.e. fruit soup, is a summer delicacy. It can be made from any fruit in season (sour cherries, peaches, plums, strawberries, etc.) and forms the ideal starter of a light lunch. We wanted to treat our international school group to some chilled plum soup. It turned out to be a complete disaster! They did not understand the concept and they just didn’t like it, and left most it.
Such incidents teach us that although Hungarians are madly proud of the delicacies of our cuisine, it does not necessarily mean others will like it. How adventurous are you when it comes to tasting new things? Here’s a recipe from CreativeKitchen:
INGREDIENTS
3 apples – chopped 🍎
2 cups of sour cherries (stoned)
1 stick cinnamon
4 tablespoons sugar
1 cup milk
2 tablespoons flour
1 pinch salt
Put the cherries, apple, cold water, cinnamon, salt and sugar into a pan. Bring to the boil, reduce the heat and simmer for 20 – 30 minutes, until the cherries and apples are tender. In a cup, whisk the cold milk and flour until the mixture is smooth. Stir into the cherry soup and cook it until the liquid thickens (simmer for up to 5 minutes). Remove from the heat, place the pan into cold water and once the soup is tepid, chill in the refrigerator until ready to serve.
